Vegetables cover roots, tubers and produce such as carrots, potatoes, onions and squash, destined for retail, processing and distribution.

They last longer than leafy greens and tolerate variation along the way better, but they keep breathing after harvest, and accumulated heat accelerates quality loss. The balance between humidity and ventilation is the main concern, because air that is too dry dehydrates and still air encourages sprouting and rot.
