Fresh fruit is harvested for consumption or processing, exported and imported within commercial windows defined by the growing season.

It stays alive after harvest: it breathes, ripens and releases heat and gases, which means the cargo changes state throughout the journey even with temperature under control. Some species release ethylene and accelerate the ripening of others, which makes combining products a technical decision.
